INGREDIENTS

4 eggs

½ yellow onion, diced

1 bell pepper, diced

1 medium tomato, diced

2 ounces deli ham, chopped

salt and pepper (to taste)

INSTRUCTIONS

PREHEAT a large nonstick skillet over medium heat.

LIGHTLY coat the skillet with cooking spray.

BEAT the eggs in a bowl and season with salt and pepper.

GENTLY pour half of the eggs into the skillet.

REDUCE heat to low and cook until the eggs begin to set up.

ADD half of the vegetables and ham to the omelet.

CONTINUE cooking until the eggs are set up.

FLIP the omelet in half.

REPEAT with remaining ingredients.
