AVOCADO EGG SALAD ON ARUGULA

INGREDIENTS

2 cups arugula

8 hard boiled eggs

2 avocados, pit and skin removed

1½ tablespoons lemon juice

⅓ cup chopped onion 

½ teaspoon salt

black pepper, to taste

INSTRUCTIONS

ADD all ingredients (except arugula) to a bowl and mash. 

STIR to combine.

SERVE on top of arugula.
