INGREDIENTS

4 eggs, beaten

Salt and pepper

1½–2 ounces dairy-free cream cheese, diced and cold (like Kite Hill)

3 slices smoked salmon

chives, chopped

Dill, to taste (optional)

INSTRUCTIONS

SCRAMBLE eggs in a large, greased skillet over medium-low heat, adding a pinch of salt and a few grinds of pepper.  

WHEN eggs are just about cooked (to your liking), gently stir in the cream cheese, then the smoked salmon. 

GARNISH with chopped chives.
